Food/Cooking

I'm starting a new job next week so i decided to smoke some beef.

Had it brining over night with pepper and rosemary,then smoked for an hour
with some local Jarrah.Should be good in a sammich with some salad,avo,and greek
yoghurt.

I usually attend my-brother-from-another-mother's super bowl parties, I always make the salsa. Here's a quick peek at how I make mine, it's pretty basic with only 7 ingredients.

I've never bothered to get the exact measurements, I go with a general amount of each ingredient then make adjustments after it's set in the fridge overnight.

Here's 5 cloves of garlic, 2 handfuls of red onion and 4 decent "bunches" of cilantro.

Next I dice up 6-8 red tomatoes, depending on their size. These were really inexpensive at the store today, and freakishly red on the inside. They were like summer time tomatoes!

I top it off with a can of red crushed tomatoes, it gives the salsa a nice color and texture and it saves money from having to buy so many fresh tomatoes. I also add half of a jar of jalapenos and some of the juice, along with some fresh squeezed lime juice.

Everything is finally added together, then left to rest for a few hours before I'll taste it to see what tweeks it might need.

Honestly, I just made this tonight as a "clean the pantry" meal. Bought the pork and onion today, everything else was there.

I almost never have rice, I don't even know why I have it.
 
Get a good rice cooker and some good rice and ditch that Minute Rice. I ate Minute Rice all the time before I lived in Japan for a year. Haven't had it once since I got back. Maybe I'm a rice snob now.

Tossedman is right! I grew up only on rice cookers. Get a Tiger rice cooker made in Japan. They are expensive but last forever!
 
The wife andI were in the mood for some Mexican food so I decided to make some chicken enchiladas....I made all of this for just under $10!



Cubed up the cooked chicken


Drop in the onion,pepper,enchilada sauce,sour cream ,shredded cheddar... Let that cook up

Time to make the enchiladas




Threw them in the oven at 350f for 20 minutes and boom!!


I topped this babies with some sour cream and jalepenos and ....WoW These were delicious!
