Food/Cooking

It's been two weeks since I've had crispy skin wangs. I gotta fix that.
 
This evening's fare shall consist of:

Grilled salmon with champagne mustard, honey, lemon, dill weed, fresh ground pepper glaze and a touch of Ol' Bay seasoning.
Steamed broccoli florets.
Whole grain mac and cheez.
Melon and slaw.

Not sure if I've put this in here or not. This is something my wife came up with.

Get a pineapple, skin it, cut out the eyes, give a good coating of brown sugar and cinnamon, wrap it with two layers of heavy-duty foil, and put it on the grill/smoker over the coals for a couple of hours. more than two is OK, it's wrapped in foil so it's not going to go dry.

Remove it from the heat, put it in a pan, and open the foil. Dump the juice and pineapple in the pan.

Cut it up. The core is pretty fibrous so cut around it if you didn't cook it for a long time.

Then you have this. Pictures Tatum took at the G6.

Threw some 18oz Porterhouse steaks on the grill for "Cinco de Mayo" .... served up with some suffed quahogs and homemade red garlic mashed potatoes.."thumbsup"

I played with my scaler while grillin.... just ate.... and now its time to lay back and relax....
 
Some more Porterhouse steaks for that ass..... this time with rice pilaf and a stuffed scallop....Oh and some chinese chicken wings for Eeepee!!!

Bought an Orion Smoker to see what all the hoopla was about. Supposed to smoke various meats very quickly. $139 plus tax. Takes a 10-13lbs bag of charcoal.

Bought some pork spare ribs and hit em with a quick brown sugar, cayenne powder, salt, pepper, paprika, garlic powder and onion powder dry rub.

1:30 later we were at 168 degrees. Probably could have taken em off sooner but i didnt lift the lid til the 1:30 mark.

Looks good Shane! I have an Orion and like it so far. Not a bad price for us LazyQers and makes good food. Turkeys and big cuts like butts, hams etc come out really moist. Not as smokey as a real pit but still good"thumbsup"

Good to know. , I was kinda thinking of this as "hobby grade" smoker.:ror: It does do a good job. Next up is make a batch of polish sausage and throw it in. Should do that tomorrow evening. I married into a family that is pretty serious about sausage making so I can make a mean link now. Turkey is second on the smoke list.

Next time I visit my folks, I'll snap a pic of a "hobby grade" smoker.....the biggest one my dad has can cook about 15-20 briskets and a whole coup full of chickens at the same time. :ror:

BTW, good call with the sauce on the side. My dad ALWAYS took it as an insult when people sauced up his BBQ without tasting it first. He used to tell me "if the meat needs sauce, you fawked it up" :lol:
