Food/Cooking

Tried some of this yesterday, good flavor but not as hot as I thought it would be. I was dipping french fries in it.

Havent seen that mustard yet. I love their creamy horseradish and spicy mustard. I'm still up in the air on the Heinz sawse. I'm incredibly partial to homemade lately and I have my standbys rays and famous daves

I swear I'm gonna figure out where you live and just ambush your grill one of these days!

So ive been on kind of a homemade kick lately when it comes to sauces especially pasta sauce but for marinara until my tomatoes come in ive been using canned sauce and or canned crushed tomatoes. anyway the other night I made some sauce for meatballs and it frankly sucked. It was very acidic and almost ketchupy. I made it like a usually do with heavy doses of garlic, basil, oregano, red wine etc. the only thing I did differently was shorten the cooking time a few hours. could that few hours really change the taste that much or did I maybe get a bad batch of sauce? thoughts?

You have to really simmer the heck out of canned tomato sauce to kill all that sugar. Also, the brand can make a difference. I've actually had better luck with my store brand (Hannaford) than a more expensive brand (Cento). I used Cento as a base for chilli once and it came out insanely sweet (in a bad way). That was the only thing I did differently. I went back to the store brand.

You know now that I think about it I do usually use store brand but I had a can of hunts around so I used it.

When I'm feeling really ambitious and masochistic, I'll buy 12-13 romas, boil the skin off, deseed them and then puree them in my food processer. It makes for the freshest tasting tomato sauce.

I stopped using Hunts can toms 'bout 2 years ago. Seemed like the recipe had changed, not for the better either. Tried a variety of others and settled on this brand, and liked it from the start. I make sauce pretty regularly. If you can find them, try 'em. "thumbsup"

I simmer for 4 hours or so but i find it tastes better after it has sat in the fridge overnight. I think it gives the flavors time to meld together.
