Food/Cooking

Made dinner for me and my pops tonight. When I lived with my parents hot sausage sandwiches and WWF were a Friday night tradition. Well I'm a night late but the sentiment is the same.
Firstly you have to start with this sausage. Its made by a little family run 104 year old Italian grocery store around the block from my work that frankly is the only Italian sausage I will buy and eat.

Then a nice crusty bread(from the same store) (my hand is for size reference)

Sausage fried up with some fresh diced red onion

Bread hollowed out and cheesed with provolone and mozzarella

Prepped and ready for the oven.

And ready to eat.

And to uphold tradition we sat and watched wrestlemania 10. (dad doesn't like new wrestling).
 
It's the wife's birthday today, so I am making one of her favorites: my chicken stew.

Typically, I bake off 2 bone-in breasts and 4 bone-in thighs and break them down for the stew. This time I decided to go for a little extra layer of flavor and smoke them on the Weber. I even saved the drippings to saute the vegetables in.

~ 2hrs and 15min @ 325F with mesquite and pecan chunks.

Here is the recipe:

Chicken Stew

I don't do it exactly as written.

1) I don't do the biscuits (the wife is gluten intolerant) and use brown rice flour.

2) Because I don't do the biscuit step, I do the stew entirely in one pot to keep the mess to a minimum.

3) I add mushrooms to the saute

4) I add 1/2 cup of cooked rice to give it some "bulk"

5) I use canned peas over frozen, but that is just preference

6) I add ~1 teaspoon of ground thyme to give it a more "earthy" flavor.
 
So here is the process:

I don't drink a lot of soda but I saw this in the cafeteria at work and gave it a try. Great stuff! Reminds of the sodas we had as kids, lots of sugar and flavor!

My wife loves the "Mexican" Sprite they sell at the corner store. You really can taste the difference between the real sugar version and the high fructose corn syrup stuff.
 
Wat's ya cookin' for the Holiday?
Smoked applewood pork w/apple cider vinegar, honey soaked cornbread, baked beans, corn o' cob, and farm fresh cantaloupe, my cole slaw.

EDIT: And deviled eggs. Damn, don't wanta forget the little beauties. Lol

really, one bottle is more than what I need :ror: I don't want to eat all the cheese, just something to go with the wine (a good one, still young but tasty )

the cheese is just fabulous!! I know french cheese is not very popular but for me it's a must have for every diner "thumbsup"
