How about salad dressings? Besides god damn ****ing Ranch!

Make your own? I'm kinda into balsackmic vinaigrettes on baby spinach leaves and kinda wanna try some home whipped dressings.

I am weird in many ways...

I have always hated drowning my salad.

Good salad and a bit of fresh cracked pepper for me.

My vinaigrette:
Balsamic Vinegar
Olive Oil
Dijon Mustard
Honey
A little black pepper
 
My mom makes a raspberry vinaigrette that everyone seems to like( I personally think fruit in a lettuce salad is a crime) but its
Red wine vinegar
Garlic Olive oil
Pureed raspberries(frozen or fresh)
And a touch of honey mustard I believe.
My personal is balsamic vinegar
Diced garlic,
Extra virgin olive oil
lemon juice(fresh please)
And good spicy Dijon mustard
 
Custom creation lastnight, DELICIOUS!

2 double cheese grilled cheeses smothered in homemade triple pork green chili, covered in more cheese.

I may have been born in the south but I just cant eat okra. Or grits

I hated Okra when I was little. My dad ALWAYS grew it in his garden and I got so sick of picking and eating it.

Grits have, are, and always will be amazing.....a little cheese and salsa on top. Perfect!
 
My grandpa grew it too but he almost only fried it which was ok. As far as grits ive had them every they can be made and just can't get into them
 
Tinga tacos!
Tinga is an awesome spicy chicken that you can eat many ways... I like the simple and fast taco.

2 chicken breast
2 jalapeno peppers (or as many as you like or don't like)
2 large yellow onions (1 diced and 1 halved)
1 can chipotle peppers in adobo sauce
cilantro
corn tortillas or tostada shells
lime
1 tomato (I use as a topping but can also be added to sauce in blender to reduce heat)

(I started taking pics after I was already cooking so don't have it all documented... and I didn't take any once it was finished, I just started eating! So the pic of tacos is from the web)


Boil chicken breast and a large halved onion for 20 mins (or until chicken is cooked)


Saute pepper till starting to brown then add diced onion and saute till cooked. (I leave some onion out and use as raw topping)




Once chicken is cooked, remove and set aside to cool. Shred chicken once cool.


Put boiled onion and entire can of chipotle peppers in adobo sauce (less for less spicy) in a blender with 1 cup of the boiled chicken water and puree.



Combine shredded chicken with sauteed onion/pepper mix and start to fry.


Poor sauce over chicken/onion/pepper mix and simmer till starts to thicken.


fill tacos and garnish with raw onion, cilantro and lime... and sour cream if ya can't take the heat!
