Food/Cooking

Definitely have to use andouille I also like to load in the seafood and go light on the chicken.

I stayed away from andouille because I was making it for the kids as well and I didn't think their palettes would appreciate the pepperiness of it.

You use tobacco in your gumbo, Snapon? That is certainly an interesting texture and flavor... :lmao:

Donated and cooked a piggie for the local American Legion

This was my yesterday....
Well... Friday till last night actually.
Killed pig around 5pm Friday and iced her down
Took a quick nap from 8pm-11pm
Stuck her on the rod right about midnight
Sparked up the fire around 1am
Took off spit at 4:30pm
Cooled down for 1/2 hour or so and started pulling. sorry no plated pics, once I got my gloves on and started work I was too busy for pics

I just had to stare in disbelief for a few minutes.. I just spent 4 days in the ER getting 3 types of antibiotics to combat a MRSA staph infection in my right nasal cavity. PLEASE disinfect that tool box. The end result looks delicious.

Yikes!!! Sorry to hear about your illness. What did you get into ?

That toolbox was bought for the sole purpose of icing pigs a few hours or so until ready to be cooked.
It's faithfully steam-power washed with disinfectant and well bleached again after steam cleaned and put away.
Same process again each time when brought out to do next cook.

Dedicated pig box never ever used for anything else since new and WELL cleaned before and after each cook.

But very good point for anyone attempting a whole pig for the first time.

This was #21 for me.
 
I wasn't suggesting that you don't know what you're doing- looking at your BBQ trailer would tell the story that you know how to do things, I was more 'thinking out loud'. :mrgreen:

A plastic piggie inside of a bed mounted tool box could be good for a few extra scale points...:twisted:

Dr's think it was nasal hair grooming with tweezers that gave the bacteria the open wound that it needed. It could have been going on for a while, it was pretty well colonized. The bacteria could have wiped me out, I was scared sh*tless for a few days, it was too close to my good eye. I have to say, I got great care at the VA hospital. I never doubted the seriousness of the doctors in their approach to help me.
 
Been a while but this thread needed a bump, homemade Lasagna tonight. 2lbs ground beef, 1lb mild italian sausage, 1lb hot italian sausage, and a variety of store bought sauces and cheeses. Store bought noodles as well.















And that's a damn fine looking porker THX!
