Question about your configuration...

Doesn't the FX-R have a motor limit on 3S, like a 35T or higher?
Also, the FX-R is motor limited down to a 12T, right?
Just wondering how it works with the 3S and a 7T?

You need to search more. Yes FXR can handle 3S. Cobalt motor has a 7 slot armature not 3 slots like a China motor so it has more wraps which is more resistance. So it isn't a standard 7T. Search function good!
