Food/Cooking

No, I don't think you went too far into it, and I appreciate the time you took to do so. I'd just have to try it to be honest.
 
Indeed... different strokes/ different folks lol. I think I've just had so many bland burgers throughout my life that when I got into cooking, I wanted generous amounts of flavor. On the flip side, I've had very modestly seasoned burgers ( salt & pepper) that blew me away... proof that much of it is the cut of meat, fat percentage, and preparation. Just seems that most beef I find in the stores these days is pretty tasteless.

I've never had authentic ramen, so I have no reference as to what this should taste like. However, I will say it is probably one of the tastiest soups I have ever made. There are flavors coming from all directions on this. Ginger, garlic, soy, a little kick from the rice vinegar, the fat from the chicken, etc all sitting in perfect balance.

We have a really good Asian market a few blocks away, so I was able to source as many of the ingredients from there as possible (I have never seen so many types of "fish sauce" before :shock:).

On a side note, those are Fresno peppers from my garden floating in there. They were "early fruit", so I wasn't expecting much from them, flavor-wise. When I tried a slice, I basically got punched in the face with "HI!!! I'M A FRESNO PEPPER!!!". I had read that they were slightly hotter than a jalapeno, but that certainly caught me off guard. The ****er even gave me the hiccups for 10 minutes... :lmao:

I like to keep mine simple as well. Salt & pepper, then top with bacon, cheese and jalapeno slices. Sometimes I will also top with a fried egg.

I have pretty much stopped ordering burgers at restaurants. I am weary of these mile-high slop-fests that you can barely pick up, let alone get your mouth around. And, if you do manage to pick it up, you end up wearing half the toppings, as they get ejected out the back when you bite into it. In the rare instance I do get a burger, it is a fork & knife affair.

That is boar bacon floating in there, as well. I find it has a better flavor than regular bacon and is less greasy, too. I get it from a store a few towns over that sells all kinds of game meat: The Healthy Buffalo
 
It's pouring rain up here in NH, so no crawling today. :cry:

However, I was able to hit the garden before it started raining. It turns out I had enough peppers to make a 16 oz. jar of pickled hot peppers:

It is a medley of Jalapeno, Fresno and Cherry peppers.
 
^^That looks delicious! My brother in law makes stuff like that all the time.


Other than the corn and rice (Diabetic) that looks insanely good. The poop fish tastes remarkably well if prepared right. Like catfish, screw that up and nobody would eat that starving to death.
 
Bison back ribs:




Flavor-wise, the smoke was excellent. I need to fine tune my rub as it was a little too peppery. The internal flavor was delicious. The only gripe I had was that the surface was pretty dry. I'm not sure if I over-cooked them or if I need to brine these, as they don't have nearly the fat of a pork rib. I was spritzing them pretty regularly, but that didn't help.

More pickled goodness:

Anyone try those Sous Vide boil in water things? Looks interesting so was curious.

I feel lucky that I have 4-5 decent sources for meat in a 25 minute drive that aren't the supermarket. Having said that, I have never had any major issues with Hannaford's (my grocery store) meat.

I have a bunch of tomatoes to pick and more peppers, so it is going to be a busy weekend.
 
skinnyj, when you smoke do you keep pans of water in the smoker also? If not, try it, and keep them about 2/3 filled up until you're done. "thumbsup"

Bison prime rib is one of the best things I've ever had. I know why they were almost hunted to extinction, because they're so damned delicious!

Yeah, I have water in there. Especially in the summer because it acts as temp control as well as adding moisture.
 
Grilled chicken breasts, two seasoned, one plain to make taco chicken meat later on, with mashed potatoes and green beans from my parents garden.

Nothing fancy... Just a quick, cheap, and filling dinner after a hectic day...

Thin & crispy bacon
Scrambled egg
Extra-sharp cheddar cheese
Re-fried beans
Chopped sweet onion
Med-Hot Salsa
Butter/ black pepper/ salt
Fresh-made large flour tortillas
Pre-made hash-browns ( not as good as homemade but much easier and faster)
