I thought I'de post a thread for everyone who has a favorite Christmas recipe they may want to share, even if ya have to get it from your wife / girl friend.
Here is one my wife makes that is fantastic "thumbsup";

NEIMAN MARCUS BROWNIES

Butter Pecan cake mix
1 egg
1 stick melted butter
<o:p> </o:p>
Mix together & pat in pan which has been greased.
<o:p> </o:p>
Then mix together,
<o:p> </o:p>
1lb. box powdered sugar
8 oz. cream cheese
2 eggs
1 stick melted butter
<o:p> </o:p>
Mix together & spread over cake mix.
Sprinkle with crushed pecans.
Bake @ 300 degrees for at least 1 hour, or until done.
 
And my second favorite, frickin' delicious "thumbsup".



Peanut butter balls II

yeilds 72 balls

1 1/2 cups peanut butter (smooth)
1 1/3 cups graham cracker crumbs
1 cup butter
4 cups confectioner's sugar (powdered sugar)
2 cups semi sweet chocolate chips
1 tbs shortening

Directions:

1. Mix together peanut butter, butter or margerine, confectioners' sugar and graham cracker crumbs. When fully mixed shape into 1" balls.
2. Melt chocolate chips and shorteningin top of double boiler. Dip balls into chocolate mixture and let dry on waxed paper. (Poke each ball with a toothpick for easier dipping).
 
Alton Brown's 2 minute fudge. uber good and super fast to make"thumbsup"

Ingredients


  • 8 ounces unsalted butter, plus more for greasing pan
  • 1 cup smooth peanut butter
  • 1 teaspoon vanilla extract
  • 1 pound powdered sugar
Directions

Combine the butter and peanut butter in a 4-quart microwave-safe bowl and cover with plastic wrap. Microwave for 2 minutes on high. Stir and microwave on high for 2 more minutes. (Use caution when removing this mixture from the microwave, it will be very hot.) Add the vanilla and powdered sugar to the peanut butter mixture and stir to combine with a wooden spoon. The mixture will become hard to stir and lose its sheen. Spread into a buttered 8 by 8-inch pan lined with parchment paper. Fold the excess parchment paper so it covers the surface of the fudge and refrigerate until cool, about 2 hours. Cut into 1-inch pieces and store in an airtight container at room temperature for up to a week.
 
my home made chex mix

1 beer
2 cups of wheat chex
2 cups of rice chex
1 shot of your favorite spirit
2 cups of corn chex
2 cups of pretxel sticks
1 beer
1 cup of mixed nuts
1 stick of salted butter melted with:
worchestershesheireshershire sauce
garlic powder
onion powder
season salt


Preheat oven to 250*, mix your cereal in a big turkey pan along with melted butter seasoning mix. Drink beer while you stir the mix. Place in oven for 15 minutes. Drink beer while waiting. Remove from the oven, stir and put it back in the oven for another 15 minutes. Drink more beer while waiting. remove from oven , stir again and put it back in the oven for the last 15 minute round. Drink a shot and chase it with a beer. Cover your kitchen counter or a table with paper towels, pour out the hot mix after the last 15 minute interval. Drink beer and eat mix. The soggy pieces are the best. Hopefully there will be some left over for your family and friends. If not, that's cool too.

Tortilla Soup

Well this isn't really christmas specific but it's amazing.

My Tortilla soup recipe family made by me (Im 14)


2 big boxes of swanson chicken broth
2 large cans organic Muir Glen fire roasted tomatoes-chopped (I've found these are the best)
1 red pepper
1 white onion
1lb chicken breast ( I usually use 3)
1 pack chorizo mexican sausage-LA Banderita Chorizo Fino (or can use vegitarian chorizo and it will be less greasey)
Diced garlic-i use 2 medium sized cloves
1/3 cup cholula hot sauce- I've found this adds best with other ingredients yet will still make your nose run
1 bag red potatoes

Chop chicken up
saute chicken, chorizo, onion, pepper and garlic.

In a LARGE pot put broth, Tomatoes, potatoes, hot sauce, sauted items and bring to a boil, then simmer.
Cook till potatoes are done.

Can garnish with sour cream, shredded cheese, tortilla chips, or hot sauce.:)

Coca Cola

Mix ingredients in glass to taste.

It's a rough recipe but comes out awesome everytime

Scalloped corn
2 cans cream corn
1 can whole kernal corn
1 tube of saltine crackers
2 eggs
cheese to preferred amount(usually 20 small 1/4'' cubes)
pepper

Mix the three cans of corn up with the eggs and finely crushed crackers. add cheese and pepper. 13x9 pan greased 350 degree oven for 25-30 min.

THis dish is great and always my favorite.
 
Giblet Gravy:

Giblets from one turkey or chicken(or one pack gizzards if you like them like i do)
4 cups cold water
4 tablespoons flour
4 tablespoon butter
2 cups pan drippings or broth
1/2 cup cold milk
1/2 tsp salt/pepper
2 hard boiled eggs


Bring giblets to boil in saucepan with water.Reduce heat,simmer about 1 hr-30 mins.Drain in colander,allow to cool,chop and set aside.Melt butter in heavy saucepan,stir in flour.Cook and stir 3-5 mins or until golden brown.Slowly stir in broth and milk.Cook until thickened.Season to taste with salt/pepper mixture.Stir in eggs and giblets.



good on stuffing and such."thumbsup"



Oyster stuffing:

1 pint oysters(drained,save juice)
3/4 cup melted butter
2 tsp salt
1 tsp pultry seasoning
1/4 tsp pepper
2 quarts bread crumbs(8 cups)
3/4 cup milk or combo of milk and oyster juice to equal 3/4 cups.
1/2 cup chopped celery
1/2 cup chopped onion

boil oysters 2-4 mins until edges start to curl
chop oysters(set aside)
melt butter on low,add seasoning,salt,pepper and poultry seasoning,stir into butter slowly.
put bread crumbs in large bowl(add oysters and butter mix)toss
add milk,celery and onions
stir
bake at 350 for 30-45 mins.
 
I am not much of a cook, but for the Holidays I make the traditional Green Bean casserole (Frenches fired onions and Cream of Mushroom soup) with Asperagas instead of yucky old green beans :mrgreen:
